Tahini, Pistachio & Apricot Chia Pudding

Prepare Your Chia Pudding

  • Use 1-1.5 tablespoons of chia seeds per person.
  • Mix the chia with your favorite plant-based milk. Chia to liquid ratio is 1:4.
  • Stir well. I find that stirring while pouring in the milk helps with clumping. I don’t have to stir once, let it sit and stir again.
  • Cover and refrigerate overnight.

1. Assemble Your Bowl

  • Spoon your prepared chia pudding into a bowl. You can add more plant-based milk if the pudding is too thick for your liking

2. Drizzle and Dollop

  • Pistachio paste to your liking. This is the star of the bowl. I use about 1 tablespoon per person
  • Date syrup to your liking.
  • Tahini – about 1/2 teaspoon.

3. Sprinkle and Garnish:

Feel free to adjust the quantities of each to your liking.

  • Dried apricots
  • Goji berries
  • Wheat germ
  • Milled flaxseed
  • Shelled pistachios (optional)
  • White sesame seeds (optional)
